Vegan life and making the most of the sunny weather

I’ve been super busy today. Whilst it was a bit cloudy this morning, the weather really brightened up and we definitely made the most of it.

So my morning started by going through the new Vegan Life magazine, defs one of my faves. I also had the yummiest chocolate berry protein smoothie, which was a great healthy start to the day.

As I was flicking through the magazine I came across a delicious looking pineapple parfait, although super high in calories. So Sam, who is always looking to get in as many calories as possible, had it instead. So yum! We made some adjustments, using The Coconut Collaborative vegan yoghurt, pecans, walnuts, pineapple pieces and buckwheat granola and topped with desiccated coconut.

After our delicious breakfast we went off for a cycle. I’m looking to save a bit of money next month on parking and so instead cycling half the distance to work. I wanted to have a go at it before I fully committed, just in case it took too long or wasn’t great. But actually, I loved it, it’s such a nice route and as the weather starts to improve it will even better. We went the route I would go in the morning, stopping off at Crossfit for a quick workout, before cycling back to the car.

So after all that we went home, and Sam surprised me with a box full of vegan goodies from Amazon Pantry, which was so great. Excited to use the liquid aminos in my cooking, and the tomato sauce is so yum.

We finished off with a walk along the beach and a thai takeaway. A pretty great day. I’ll be sharing the recipe for my protein smoothie soon, and hopefully get a better photo!
