Vegan Mexican Inspired Corn on the Cob

I am a big fan of corn on the cob, and have been throughout my entire life. My family and friends can testify to that, so I felt it was only fitting to finally get a recipe up on the blog to hero one of my favourite things.

What’s so great about corn on the cob is it’s so versatile. You can leave it as it is, maybe finish with a bit of salt and vegan butter, or go all out with different flavours. It’s great on the BBQ or just boiled in water.

In this instance, I’ve gone for a Mexican inspired corn. A mix of spicy and smokey smoked paprika and sour lime juice makes these the most delicious corns you’ll ever have. In this recipe, once the corns have been boiled, we’ve grilled the corns on a griddle pan to help give them a char. If you don’t have access to a griddle pan or BBQ, or simply can’t wait, they’re great just boiled and covered in this delicious mix, so it’s completely up to you.

Serve these as a side dish, they’re great as part of a BBQ or with a burger (give our ultimate vegan burger a go). Give them a go, they’re so quick to make you’ll be eating them all the time.

A smokey and simple Mexican inspired corn on the cob recipe that's great as an easy side dish

Ingredients
  • 8 mini corn on the cobs
  • 50g vegan butter, melted
  • Zest and juice of 2 limes
  • 1.5 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 1 tsp salt
  • Optional - 0.5 tsp chilli flakes
Directions
  • Step 1 Bring a large pan of water to the boil
  • Step 2 Once boiling, add in your mini corns and boil for 4 minutes
  • Step 3 Drain and set aside
  • Step 4 In a bowl, mix together your melted butter, lime juice, lime zest, salt, smoked paprika, paprika, cumin and chill flakes (if using)
  • Step 5 Add 1 tbsp of your butter mix to a griddle pan and heat over a high heat
  • Step 6 Add your boiled corns to the griddle pan and pour a tbsp of the butter mixture over each corn
  • Step 7 Keep turning your corns so that they are well charred all over
  • Step 8 Remove from the pan and pour over the remaining butter mix
  • Step 9 Serve!
