This is one of my favourite meals because the vegan satay sauce is so good. Super peanuty, it becomes a great main meal and is an easy weekday dinner idea.
I’m sure the satay sauce would go great with anything, but this meal as a whole, which might at first seem a bit odd, is really yummy. Tofu and roast veg skewers, sweet potato fries (or alternatively, swap for rice) and cucumber and pineapple. If you do give this meal a try, don’t forget to dip it every thing into the sauce!
The vegan satay sauce is really quick to make and so easy, and once made, you can just leave and re-heat for when you need it. One thing to remember though, do not let it boil. This is a mistake I’ve made in the past, and caused the sauce to split. Whilst it still tasted great, a layer of oil formed on the top, which I had to drain away. So try not to make the same mistake.

Vegan Satay Sauce
- 230ml coconut milk
- 20g tomato paste
- 80ml pineapple juice
- 105g smooth peanut butter
- Step 1 Add all ingredients into a large saucepan.
- Step 2 On a low heat, gently stir ingredients together until everything is melted and combined.
- Step 3 Once melted, heat until desired temperature. Do not let it boil
- Step 4 Serve!
